Sweet Potato and Sausage Soup

January and “soup” go together! On a chilly night nothing satisfies more than a hot bowl of soup and this Sweet Potato and Sausage Soup is a great recipe for a winter warm-up!

This soup was served at a recent get-together! Oh, I  had to have the recipe! Where this soup originated, I am not sure. The mixture of the sausage flavors along with the sweet potatoes is truly a winner to my taste palate! I’m sure you’ll love it, too!

Ingredients:

3 Tbsp. olive oil

10-11 oz.  Chorizo (Mexican)  sausage (cut 1/4 ” thick) substitutes for Chorizo are: Italian sausage or chicken  Be sure the Chorizo is link and pre-cooked; not bulk!

2 medium onions

2 garlic cloves, minced

2 lbs. red skinned sweet potatoes (peel and cut crosswise 1/4 ” thick and halved)  – approx . 2 large sweet potatoes

1 lb. white skinned potatoes (peel and halved lengthwise, cut 1/4″ thick) approx. 4 med. potatoes

6 cups low-salt chicken broth

9 oz. fresh spinach

 

Directions:

Heat 2 Tbsp. Olive Oil in large pot over high-high heat. Add sausage and cook till brown. Stir about 8 minute and transfer sausage to paper towels and drain. Add onions and garlic, cook stirring approx. 5 minutes. Add all potatoes and cook until beginning to soften – approx 10 min. (with a small amount of broth) Add chicken  broth, bring heat to medium-low. Cover and simmer until potatoes are soft approx 20 min. Using masher, mash some potatoes.( not all)  Add browned sausage. Stir in spinach and simmer until just wilted – 5 minutes. Stir in 1 Tbsp. oil, salt and pepper.

Best Appetizer Recipe!

 Perhaps you are still looking for a great idea for your holiday party! Here it is…..

This Tomato Crostini with Whipped Feta is the best appetizer recipe! You can make this ahead, then put it together just before guests come and it doesn’t get soggy like bruchetta! This will be the hit of the party! Everyone will want the recipe!  The recipe is from Ina Garten and the Food Network. I’ve made a couple changes, however.

Ingredients:

6 oz. good feta cheese, crumbled
2 ounces cream cheese, at room temperature
2/3 cup good olive oil, divided
2 tablespoons freshly squeezed lemon juice
Kosher salt and freshly ground black pepper
2 tablespoons minced shallots (2 shallots)  –  I used onions
2 teaspoons minced garlic (2 cloves)
2 tablespoons good red wine vinegar
2 pounds ripe heirloom or cherry tomatoes, 1/2-inch-diced
3 tablespoons julienned fresh basil leaves, plus extra for serving
20 to 25 (1/2-inch-thick) diagonal baguette slices, toasted
2 tablespoons toasted pine nuts – (sometimes I don’t use these)
 
Directions:
For the whipped feta, place the feta and cream cheese in the bowl of a food processor fitted with the steel blade. Pulse until the cheeses are mixed. Add 1/3 cup of the olive oil, the lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper and process until smooth. ( I added a small amount of the garlic and some onions to the cheese mixture)
For the tomatoes, up to an hour before you’re serving, combine the shallots, garlic, and vinegar in a medium bowl. Set aside for 5 minutes. Whisk in the remaining 1/3 cup olive oil, 1 teaspoon salt, and 1/2 teaspoon pepper. Add the tomatoes, stir gently, and set aside for 10 minutes. Stir in the basil and taste for seasonings.Lightly toast the baguette slices.
To assemble the crostini, spread each slice of bread with a generous amount of whipped feta. With a slotted spoon, place the tomatoes on top. Put the crostini on plates and scatter with the pine nuts.
Sprinkle with extra basil ( I’ve used parsley) and serve

To cut down on the cost, use dried basil in the recipe.(Actually, the fresh basil never got in my shopping bag at the grocery store one time so I had to improvise.) Also, pine nuts are expensive so leaving them out is an option, too. Use parsley as a garnish instead.

Other options are to serve this on large crackers. Place the creamy feta in one bowl and the tomatoes in another. Guests are able to make their own.

There are so many different ideas from casual to elaborate.! Because it is a yearly event, I keep thinking they can’t do better the next year, but they do! The first two table settings used centerpieces that they owned, but they embellished them with cranberries, berries, holly and evergreens! You can’t go wrong with those items in various combinations!

At this table, the hostess had a friend make these unusual plates. They were beautiful!

The centerpiece doesn’t show up very well in this picture, but it was a collection of brass angels hung on a brass tree.

Each vertical wire is decorated with a small red garland to cover the wires.  She then placed  it on top of an upside-down  styrofoam sectioned deli tray and used Plaster of Paris to create the snow scene on top. The tiny figures including a skating rink look so pretty! Just a special Christmas centerpiece that certainly generates Ooh’s and Aah’s!

Holiday Punch (quick and easy)

Three ingredients is all that is necessary to put together this great non-alcoholic holiday punch! It is quick and easy, but tastes delicious. I recently served this at an event and people repeatedly asked for the recipe! Thought I’d share it with you!

Holiday Punch Ingredients:

1 large bottle of CranRaspberry Juice (chilled) 64oz.

1 quart of vanilla ice cream

1 bottle of ginger ale ( or cranberry ginger ale) chilled

 

Directions:

Just before ready to serve, pour cran-raspberry juice into punch bowl. Spoon in scoops of ice cream.  Pour ginger ale over ice cream and stir to foam up (I use about 1/3 to 1/2 bottle of ginger ale).  Makes 12 -15–6 oz. servings.

 

Now, that’s quick and easy plus delicious and pretty!

These awesome Christmas  Table Settings were done by the women from our church. We have an annual Christmas Extravaganza event and it is such a beautiful way to begin the Christmas season. Women host a table and set the table as they choose. Each one is beautiful and creative! There’s a delicious catered dinner with a special Christmas program. In every way, it is a delightful evening celebrating the birth of our Savior!

This first Christmas Table Setting idea is carried out with all Thrift store finds! (except for silverware and birch candles)! It just shows you that you don’t have to spend a lot to have beautiful Christmas table settings!

Red china works well with the plaid runners. At each place is a brown paper bag with some goodies for a hostess gift. Cute mitten and star ornaments attached with a red-painted clothes pin add to the whimsical feel of the table!

The next Christmas Table Setting is one of the tables that I did. It is an” up north cabin theme”.

I used an old log cabin made from twigs that I’ve had for years. I thought it was time to give it a new look!

The china was a $7.00 find at an auction (15 place settings! – What a deal!) I made the napkin rings from birch bark that I found in our woods. I’ll show you how here….

By candlelight, the table looked like this. Under the cotton, I placed several individual LED lights. They gave off  a beautiful white light and made the snow look so pretty!

Their small gift was “birch logs” wrapped in a cellophane bag and tied with raffia, (pretzels dipped in white chocolate and drizzled with dark chocolate)

Birch Bark Napkin Rings

While planning my Christmas table for our Christmas Extravaganza at our church, I decided to do a “up-north cabin theme”. It needed some woodsy napkin rings and wanted to try to make Birch Bark Napkin Rings! We live in a wooded area so a short walk produced lots of birch bark from downed trees nearby. It was pretty dirty and stiff! If I tried to bend it, it would break.

I came home and put the birch bark in bleach water. I wanted to be sure to kill any bugs, etc., that may be attached. Also, I scrubbed the inside of the bark and let it soak for 1/2 day.

After soaking, it was more flexible, but it was still hard to work with in such a flat state. I curled the birch bark and put it into a plastic container.

After a few hours, I transferred it to glasses so it would be curled even tighter and let them dry.

When they were workable (the next day), I cut them just a bit larger than the cardboard tube.  I formed the napkin rings by hot gluing the bark around the tube. Doing it in small sections and securing with paper clips worked the best. Let a section dry and then do the next section while each time curling the bark around the tube. Be sure to cut it long enough to overlap quite a bit.

When dried, I added a little greenery and a small pinecone (bought these).

Each one is unique!

You probably know this, but don’t take bark from a living tree. It will kill it! Use only bark from dead trees or cut logs!

Notice the wooden sconces alongside the fireplace. They are a smaller version of the ones posted earlier in the dining room. They have wooden stars added to them.

Well, not having vintage fan blades or a cute nook, I turned wooden paint stirrers into a similar, but smaller tree.

Here’s my version….

Christmas Idea House Part 3   grandparentsplus.com I rubbed the paint on with a cloth as I didn’t want it all the same depth of color. Adding a stain would make it look old, too. I used 8 sticks – 7 for the tree and a partial one for the trunk.  For a larger tree, use lathe and cut to your desired dimensions. Hot glue the sticks together and add a loop for hanging! Simple and inexpensive!

I think this idea is beautiful!

It is a gnarly branch painted white and adorned with springs of pine, pine cones, white and crystal ornaments. It is hung against a backdrop of a furry white pelt. It looked spectacular! This was hung on a wall in a room, but I think it would be awesome over a fireplace, too!

While I don’t have my other decorations done in the office bathroom , I did make these wreaths from items found at the Dollar Tree Store and place them on my vintage mirror.

The Idea House master bedroom’s headboard is made from cedar shakes. I would call it “Rustic-North Woods Elegance”!

Up the stairway, they used a combination of plain wood with metal accent pieces as wall art.

This is a simple idea for the bathroom. Using fish line to hang your ornaments, use as an accent at the top of your shower curtain!
