A zucchini bread with a hint of orange? Yes, it’s a delightful addition to zucchini bread! Zucchini Orange Bread is a tasty change from the usual zucchini breads. The light orange flavor comes from orange juice and orange peel.

Zucchini Orange Bread Recipe

Ingredients

  • 4 eggs
  • 1 1/2 cup sugar
  • 3/4 cup oil
  • 2/3 cup orange juice
  • 2 cups shredded zucchini
  • 3 1/4 cups flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 3 tbsp. grated orange peel
  • 1 tsp. cinnamon
  • 1/4 tsp. ground cloves

Instructions

  1. Preheat oven to 350 degrees. Grease and flour two 8 x 4 loaf pans.
  2. In a large bowl, beat eggs until thick and lemon colored.
  3. Gradually beat in sugar
  4. Stir in oil, orange juice, shredded zucchini, flour, baking powder, baking soda, salt, cinnamon, cloves and orange peel.
  5. Mix until well blended.
  6. Pour batter into prepared pans,
  7. Bake for 45-55 minutes.
  8. Let cool for 10 minutes and remove from pans.
  9. Cool on wire racks.

Strawberry Bread Recipe

This Strawberry Bread Recipe comes from the Rose Mountain Manor Tea Room in California. I’ve change it just a bit so it has enhanced strawberry flavor using a bit of strawberry jello. The recipe makes one 5 x 9 loaf. It may not be strawberry season, but don’t worry as this recipe uses frozen strawberries which are easily available at your grocery store.

Strawberry Bread Recipe

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar less 2 Tbsp.
  • 2 Tbsp. strawberry jello (my addition)
  • 1 tsp. almond extract or imitation strawberry extract (my addition)
  • 2 eggs, separated
  • 2 cups flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 (10 oz.) pkg. frozen strawberries, thawed

Instructions

  1. In a large bowl, cream together butter, sugar, jello and extract. Add egg yolks to butter mixture, one at a time, until light and fluffy. Sift in flour, baking powder and baking soda and mix well.
  2. Drain juice from strawberries saving 1/4 cup juice. Add the juice to mixture and fold in drained strawberries. In a separate bowl, beat egg whites to stiff peaks. Fold egg whites into mixture and spoon mixture into a greased 5 x 9 loaf pan. Lightly drop pan to release any air bubbles.
  3. Bake 50-60 minutes at 350 degrees. Bake until a toothpick inserted in center comes out clean. Remove bread from pan after 20 minutes.
  4. Let bread cool completely before slicing.

Serves: 12-18 scones
Light, tender, and delicious scones. Vary the flavors and what you add to them for serving anytime.
Ingredients
  • 2 3/4 cups flour
  • 1/3 cup sugar
  • 3/4 teaspoon salt
  • 1 tablespoon baking powder
  • 1/2 cup cold butter
  • 1 cup to 2 cups chopped dried fruit, chocolate, cherry, or other flavored chips, nuts, or a combination,(optional)
  • 2 large eggs
  • 2 teaspoons vanilla extract or the flavoring of your choice (I used almond extract)
  • 3/4 cup half and half or milk for free-form scones
  • Topping:
  • 2 teaspoons milk
  • 2 tablespoons sparkling white sugar or cinnamon, or colored sugar
Instructions
  1. Whisk together the flour, sugar, salt, and baking powder.
  2. Cut in the butter until the mixture is crumbly. It’s OK if there ar a few larger lumps.
  3. Stir in the chips, fruit or whatever you’re adding to the dough.
  4. In another bowl, mix eggs, milk ( or half and half), along with flavorings
  5. Add the egg mixture to the flour mixture and stir until moist.
  6. Line a baking sheet with parchment or use greased pan Sprinkle a little flour on the parchment or pan.
  7. Drop approx. 1/4 to 1/3 cup of dough on to baking sheet for each free-form scone.
  8. Brush top of scone with milk and sprinkle sugar on them
  9. Place in freezer for 30 minutes.
  10. Remove and bake in 425 degree oven for approx. 20-25 minutes. Watch closely as this time depends on the size of your scones.
  11. Remove from pan and cool on rack.
  12. When cool, frost with a powdered sugar glaze and sprinkle with red colored sugar for Valentine Scones (this is optional)
  13. These scones are easy to” prepare for any occasion. Use dried fruits, nuts, or chocolate chips, too.

 

Ok, did you catch the secret? It’s the 30 minutes in the freezer that relaxes the gluten, makes them tender, and rise higher. It, also, chills the fat which makes them flakier! Did you know that fact?

The free-formed scones are so much easier to make and they taste the same! If you decide to freeze them, don’t frost until you thaw them out. 

Serve with Devonshire cream and lemon curd, if desired.

Devonshire Cream

1 C. heavy whipping cream
1/2 C. granulated sugar
1 tsp. vanilla
Beat the cream, sugar, and vanilla together until whipped cream consistency.
Fold in 1 C. sour cream

Chocolate flavor, chocolate chips, and bananas all go into this Double Chocolate Banana Bread! So moist and delicious!
Ingredients
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 3-4 bananas mashed
  • 1 tsp. vanilla
  • 2 cups flour – If you’re making the Double Chocolate version, add 1 3/4 cup flour and 1/4 cup cocoa powder.
  • 1 tsp soda
  • 1/2 – 3/4 cup chocolate chips
Instructions
  1. Combine first 5 ingredients mixing together.
  2. Add flour and soda or the flour, soda, and cocoa powder.
  3. Fold in chocolate chips at the end.
  4. Put into two greased and floured small loaf pans or one large loaf pan (9×5)
  5. Bake at 350 degrees for 50-55 minutes until toothpick comes out clean.
  6. Cool 15 minutes in the pan.
  7. Invert and remove bread from the pan.

Rhubarb is in season and today I’m sharing a recipe from our church cookbook. I like this recipe because it is quick and easy. It, also, makes about 30 muffins at once! Oh, and besides that, the muffins are delicious! The topping includes sugar, cinnamon, nuts, and butter. It gives the muffins an added touch of sweetness and crunch.

Rhubarb Muffins

Ingredients:

1 egg, beaten

1  1/2 cup brown sugar

1 cup buttermilk

1 tsp. soda

2/3 cup oil

1 tsp. vanilla

2 1/2 cups flour

1 tsp. salt

1 1/2 cup rhubarb, finely chopped

1/2 cup chopped walnuts (optional) or pecans

Topping:

Mix together…

1/2 cup sugar

1 tsp. cinnamon

1/2 cup walnuts or pecans

2 tsp. butter, melted

Directions:

Beat egg and add other ingredients in order listed, stirring in rhubarb and nuts (optional) by hand. Line muffin tins with papers and fill cups 2/3 full. Put 1 teaspoon of topping on each muffin before baking.

Peach-Nectarine Muffins!

Someone gave me a bunch of nectarines that were pretty ripe and needed to be used within a couple of days!  There were too many to eat so quickly so I scrambled for ideas and modified a Peach-Nectarine Muffins recipe that turned out fabulous. While I used nectarines, peaches are interchangeable with this recipe.

These Peach – Nectarine Muffins were like eating a moist muffin with jam inside! So good! It didn’t even need butter! Everyone loved these muffins!

My favorite part of cooking with nectarines is that you don’t need to peel them.  It is much faster and  easier than using peaches.

Peach-Nectarine Muffins

Ingredients:

1  1/2  cup flour

3/4  cup  white sugar

1/2 teaspoon salt

2 teaspoons Baking Powder

1/3  cup vegetable oil

1 egg

1/3 cup of nectarine slurry + 3 tbsp milk  If not making slurry then just 1/3 cup of milk  (not both!)

3 nectarines or peaches diced (two for the muffins and 1 for the slurry)

1/4 cup brown sugar (for the top of the muffins)

Directions:

Mix flour, white sugar, salt and Baking Powder

Add vegetable oil, egg, nectarine slurry or  1/3 cup milk

Note: Make slurry by dicing 1 nectarine or peach and adding a small amount (1 tsp+) of milk. Use a blender or bullet to make a slurry, thick type liquid. Add this to the dry ingredients instead of 1/3 cup of milk. If using the slurry, add 3 tablespoons of extra milk to the batter. This slurry was not in the regular recipe I had, but it adds more flavor!

Mix in 2 diced nectarines

Fill muffin cups to the top. Makes 12 Peach – Nectarine muffins!

Sprinkle brown sugar on top of each muffin.

Bake @ 400 degrees for 15-17 minutes until very lightly browned.

No need for butter on these muffins!

 I love Nectarines! No peeling is necessary! If using peaches, drop peaches in boiling water for a few seconds and the skin slides off easily!
