Gouda Cheese Hash Brown Bake

There’s a favorite restaurant that I like to go to for breakfast. Their Gouda Cheese Hash Brown Bake is amazing! I go there just to have that with an omelet or eggs.  I had never tasted hash browns like that before. I finally asked the cook if he gave out his recipe. He wouldn’t tell me the amounts, but he did give me the ingredients. So, I’ve experimented and have come up with a recipe that tastes like the one at the restaurant. They are the best! You might say they’re GOOD-Ah!

Gouda Cheese Hash Brown Bake

Gouda Cheese melted in with a hash brown mixture! The best hash brown recipe you’ll try!
Ingredients
  • Frozen Hash Browns (28-30 oz.)
  • 2 cups shredded Gouda Cheese
  • 3/4 cup yellow onions
  • 2 tsp minced garlic
  • 1 pint of heavy cream
  • 2 tsp vegetable base (look for this in your soup aisle)
  • Salt and Pepper
Instructions
  1. Thaw hash browns and place in large bowl.
  2. Add shredded Gouda cheese
  3. Saute onions and garlic until translucent in 1-2 T. olive oil and add to bowl.
  4. Add salt and pepper to taste
  5. Mix together
  6. Mix 2 tsp of Vegetable Base into 1 pint of heavy cream and stir until combined.
  7. Put hash brown mixture In a grease 9 x 13 pan
  8. Drizzle the heavy cream with vegetable base over the hash browns in the pan.
  9. Bake in 350 degree oven for 1 hour
  10. Remove from oven, cover with foil and let sit for 10 minutes before serving.
  11. Cut in squares and serve.

The vegetable base, in this recipe, adds great flavor. It’s a bit expensive, but you’ll use it again and again.

This Gouda Cheese Hash Brown Bake makes a nice big pan. If you have left-overs, just freeze the individual portions to use later. Take out as needed and microwave.

Orange Candied Sweet Potatoes

I always think of sweet potatoes in the fall. They taste so good with a meal. At Thanksgiving, many people serve it with lots of marshmallows on top. This recipe for Orange Candied Sweet Potatoes gives a different taste to the same old sweet potatoes. It is delicious, colorful, and very pretty to serve. A friend served it in slices with the glaze spooned over it and I thought it was such a lovely way that I do it, too!

I have varied the original recipe from Cooks.com just a bit. I wanted more orange flavor so I used 2 Tbsp. of orange concentrate instead of the juice. If you like it with a more subtle orange flavor, just use the orange juice. 

 

Orange Candied Sweet Potatoes

Ingredients
  • from Cooks.com
  • ORANGE CANDIED SWEET POTATOES
  • 6 sweet potatoes, halved (I like to peel them and slice them in 3/4 – 1 inch thick slices.)
  • 2 tsp. salt
  • 3 tbsp. butter
  • 2 tbsp. orange juice concentrate
  • 3/4 c. corn syrup
  • 1/4 c. brown sugar
Instructions
  1. Combine sweet potatoes, salt and 1/2 cup boiling water in saucepan. Simmer covered for 15 minutes or until tender. Pour off all but 1/4 cup stock dot with butter. Combine orange juice, corn syrup and brown sugar. Blend well. Pour over sweet potatoes. Simmer basting frequently for 15 minutes.

Boil.  When tender, dot with butter reserving 1/4 cup stock from the potatoes.

Make the orange candied syrup and pour over the potatoes. Baste with sauce.

Other than the usual baking and dotting the sweet potato with butter and brown sugar, this is my favorite way to serve sweet potatoes.

Easy Cheesy Potatoes – “Shreds”

In my book, when you serve ham, you’ve got to have cheesy potatoes to go with it! They just naturally go together! The easiest and best cheesy potatoes are called “Shreds”! They take hardly any time to put together and taste fantastic! I’ll give you a couple of versions of them and you can choose which you think is best! I use the first one more often.

Both kids and adults are crazy for these potatoes! Don’t plan on lots of left-overs!  

Easy Cheesy Potatoes – “Shreds”
Recipe Type: Side Dish for Breakfast, Brunch, or Dinner

Easy and Cheesy!
Ingredients
  • 2 packages of 28-30 oz. frozen hash browns
  • 2-3 cups of shredded Cheddar cheese
  • 1 cup of grated swiss cheese
  • 2 pints of heavy whipping cream
  • 2 small chopped onions – sautéed
  • Salt and Pepper to taste
Instructions
  1. Place 1/2 layer of hash browns in a 9×13 pan. (This looks like it won’t fit, but it cooks down.)
  2. Sprinkle onions over the layer and 1/2 of the cheese
  3. Repeat the same with the second layer.
  4. Pour cream over the top covering all areas.
  5. Bake uncovered at 350 degrees for 60 min. until hot and bubbly in the middle

 

For making a smaller batch, just use 1 package of shredded potatoes, 1 cup of cheese, and 1 pint of cream.

For an even cheesier version…..

32 oz. bag of frozen shredded hash browns – thawed

2 cups of shredded or grated mozzarella cheese

2 cups of grated Cheddar cheese

1 cup of grated Swiss

1 pint of whipping cream or half and half

Onion

Salt and Pepper

Combine and place in 9 x 13 pan and bake uncovered for  1  1/2 hrs at 325 degrees.
