Freezing Tomatoes the Easy Way!

There is nothing better than a fresh, ripe tomato from the garden! The flavor is wonderful, but often you get more than you can eat! Now what? How do you quickly and easily save them for soups, chili, or stews?

Now, I don’t like skinning tomatoes! It’s a messy job! Besides, you do lose the nutrients contained in and right under the skin. Why not make it easier? Freezing Tomatoes the Easy Way is better, less messy and quicker, too! Let me show you how….

You will need a food processor or bullet. Just simply core the tomatoes and cut off any blemishes. Put them into the food processor or bullet and process.

Puree the tomatoes and pour into muffin tins.

Place in the freezer. When completely frozen, set in warm water for just a few seconds until they loosen. Dump into  freezer bags,  place in your freezer, and you’re done! Take out what you need to add to your recipes, reseal, and keep the rest for the next recipe. Now, isn’t that easy?

Broccoli Cheese Soup

As the temperature goes way down, a great soup seems so appealing for a cold evening.  I had a bunch of broccoli left over, so I quickly make this Broccoli Cheese Soup the other night. What I like about this soup is that it is low on calories, easy to make, takes very few ingredients, and freezes well! You can add chicken or ham, if you wish.

Ingredients:

 32 oz. chicken broth

Broccoli (sorry, but I just add what I want, I don’t measure perhaps 1 cup to 1 & 1/2 cup chopped)

1 can Rotel ( 10 oz. ) diced tomatoes –  (mild or however hot you prefer) or just add regular diced tomatoes for a very mild version

10 oz. Velveeta  2% Milk ( for the skinny version) or regular Velveeta

Add onion salt and garlic salt to taste.

Add cooked chicken or ham (optional)

 

Directions: 

Cook broccoli in chicken broth until just tender. 

Add Velveeta in chunks so it melts faster.

Add Rotell or other diced tomatoes

Add spices to taste…

Add chicken or ham, if desired.

Heat and serve.

Quick Mexican Chicken Soup

In a hurry for dinner? This Quick Mexican Chicken Soup takes 10 minutes to put together, heat and serve! Nothing could be faster or more delicious. It’s healthy, too!  Five ingredients, that’s it! If you like “hot and spicy” you can make it that way. For those who like it milder, just adjust the cumin levels. Ingredients:

32 oz. chicken stock

1 rotisserie  chicken fully cooked (chop or shred meat)

1/2 – 1 or more tsp. cumin (this makes it hot)  My level is 1/2 tsp.!

1 jar salsa verde  ( 16 oz. or more)

1 can rinsed cannellini or great northern beans

 

Combine all ingredients.

Heat and serve!

Serve 6

Garnish with sour cream, tortilla chips, and cheese.  Optional: Cilantro

You can’t make dinner any faster than this Mexican Chicken Soup!  It’s delicious and nutritious! If the temperature is dropping in your area( as it is around here), this soup will warm you up! It tastes great on a cold, winter evening! I’m sure you’ll find this recipe is a keeper! 

Also, this soup is great for a large gathering, too! Invite someone over. So easy!

Sad to say, summer is gone and cold, chilly nights are upon us. This Tortellini and Sausage Soup really “hits the spot” and tastes so good on those dark, wintry nights. It’s quick and easy to put together, too. Leftovers, if you have any, freeze well for another time. This is one of my favorites!

Tortellini and Sausage Soup
Recipe Type: Lunch or Dinner
Cuisine: Italian

Serves: Serves 6
Wonderful combination of tortellini and sausage flavors in a tomato base.
Ingredients
  • 1 lb. mild bulk Italian Sausage (or hot, if you like)
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 5-6 cups beef broth
  • 1 qt. (28 oz. can) diced tomatoes
  • 1 can of tomato soup
  • 1 tsp. basil
  • 1 tsp. oregano
  • 3 carrots, slices
  • 1 pkg. cheese tortellini (9 oz.)
Instructions
  1. Brown sausage, onion and garlic together and drain.
  2. Add remaining ingredients and cook until carrots are semi-tender.
  3. Add tortellini and boil gently 4-6 minutes

I have used this chili recipe for over 25 years. It is quick and easy and tastes great! I make it easier to put together by precooking several portions of the hamburger and onions and freezing them in packets enough for one recipe. Then, when I want to put a meal together quickly, I take a packet out, add the rest of the ingredients, and it’s ready in 10 minutes!

Leftover chili freezes well, too!

Serves: 5-6 servings
Chilly Night Chili Recipe
Ingredients
  • 1 lb. hamburger
  • 1 med. onion , chopped
  • 1 can red kidney beans – undrained
  • 1/2 – 1 can black beans (rinsed)
  • 1 14.5oz. can stewed tomatoes
  • 1 can tomato soup
  • 2 1/2 – 3 tbsp. chili powder
  • Optional ingredients: sauteed green pepper, corn, other varieties of beans
Instructions
  1. Brown hamburger and onion
  2. Drain
  3. Add beans, stewed tomatoes, tomato soup and chili powder.
  4. Mix together, heat and serve!
  5. Quick and easy chili recipe.

My family doesn’t like chunks of tomatoes, so I blend my stewed tomatoes in my bullet. No chunks!
