Rhubarb Crisp – Quick and Easy!


At the beginning of summer, I  look forward to making and especially eating a delicious rhubarb crisp dessert. I enjoy one with a nice crisp topping. Some rhubarb recipes have a soggy crust, but I prefer it crisp and crunchy! In this recipe, the bit of tang that the rhubarb gives is enhanced by the added cinnamon. The sweet, crispy, crust tops it off perfectly! Add whipped cream or ice cream and enjoy!

This recipe is one I have used for years. It’s a old family favorite. I hope you’ll try it! I think it will become a favorite of yours as well.

Rhubarb Crisp – Quick and Easy!

Ingredients

  • Topping:
  • 1 cup flour
  • 1/2 cup quick rolled oats
  • 1 cup brown sugar
  • 1/2 cup butter (1 stick)
  • Filling:
  • 4 cups of rhubarb (cut in small chunks)
  • 1 cup sugar
  • 1/4 cup flour
  • 1/2 tsp. cinnamon

Instructions

  1. Preheat over to 375 degrees.
  2. For the topping, combine the dry ingredients well.
  3. With a fork, stir in soft butter to make a crumbly mixture.
  4. Filling:
  5. Combine all the ingredients and mix well. Pour combined filling into a lightly greased 8x8 pan.
  6. Sprinkle the topping evenly over the filling.
  7. Bake uncovered for 35 minutes at 375 degrees. Topping should be a golden brown.
  8. Serve with ice cream or whipped cream.
