Looking for a good recipe to use up ham leftovers? This colorful and delicious ham pasta salad is a good and easy way to serve that extra ham. Use tricolor pasta for color along with red and green pepper, purple onion, yellow cheddar cheese and red tomatoes and you’ve got a colorful and delicious salad.
Ingredients:
- 1 box of tri-color Rigitoni (or any other pasta )
- 2 lb. or more of cooked ham, cubed
- 1 lg. red pepper – cut in 1″ pieces
- 1 green pepper – cut in 1″ pieces
- 1 medium red onion – chopped or sliced
- 2 medium tomatoes (seeded) and chopped
- 1 package (8 oz.) shredded Cheddar Cheese
- 1 cup Mayo
- 1/2 c. Sour Cream
- 2 Tbsp. “Better Than Bouillon” Beef Base (find it in the soup aisle)
- 1 T. hot water
- 1 T. white vinegar
- 2 t. salt
- 1/4 tsp. pepper
- 1 tsp. garlic pwd.
Directions:
- Prepare pasta according to package directions. Drain.
- In a large bowl, add pasta, ham, red and green pepper, tomatoes, and onion.
- In a small bowl, combine mayo and sour cream.
- Add 1 Tbsp. hot water to the 2 Tbsp. Beef Bouillion and mix together.
- Add the Beef Bouillion mixture to the mayo/sour cream along with the vinegar, salt & pepper (to your liking), and garlic pwd.
- Add the mayo/sour cream to the pasta ingredients and mix together.
- Sprinkle with shredded Cheddar Cheese.
If you make this the night before, you might need to add more of the mayo/sour cream ingredients as the pasta absorbs the mixture.
