Over Memorial Day weekend, we noticed that there was a lot of Bluebird singing going on. It was pretty to hear, but we didn’t know the reason for it. The next morning we saw a bluebird sitting on the edge of my baker’s rack right on our back deck. This baker’s rack is under an overhang and I have decorative items displayed on it. I usually have some plants there, but that was one of the projects that wasn’t finished, yet.

On the top shelf, there’s a cute decorative birdhouse with a heart-shaped opening. It has been there for a few years.  Upon looking inside the birdhouse, I found that there was the beginning of a nest! This certainly isn’t the ideal spot for a nest. We have an outside cat and an occasional raccoon rambling by. This female must have had a creative streak in her because she certainly settled for “cute” rather than “location, location, location”!

The female was persistent and laid six eggs in her new home. My husband was afraid that a strong wind would blow it off the rack so he secured it on the edge making it so that the cat didn’t have a place to sit and reach in. We, also, limited our use of the deck by using a different entrance. (Anything for the birds, right?)

Finally, the eggs began to hatch. I had to quickly take pictures while the parents were away getting food.

After about  1  1/2 weeks, we noticed that only two survived. Their eyes were not completely opened yet, but the blue feathers are now visible.

We began reading about these birds and found out that they really like mealworms. Well, where do you find mealworms?

After calling around, we found them at a farm supplier. They are not cheap, but anything for our little Bluebirds! After putting them out in a dish, they quickly saw those mealworms and dug right in.

How many worms can a Bluebird hold in its beak?

It was so fun to watch them feed their young with them. They were not selfish about just keeping themselves fed and fed the mealworms to their young.

Just near the deck is a White Pine Tree. This is the place where at least one of the birds would guard the nest while the other hunted for food. I caught this picture after they fed their young. It looked like they weren’t speaking to each other! Ha!

The young bluebirds were growing quickly.  When I would go out to take their picture, they crouched down and wouldn’t smile for the camera. One morning, I was going to try one more time for their picture, and they were gone! No good-bye or thank you! I did see flutters of blue in the woods. The parents were gone from their watch on the branch, too. I put out the last few mealworms in the dish, went inside and immediately saw the male come back for them! Off he went to care for his young and treat them to the last mealworms. The adult bluebirds were tending to their young and teaching them to find food on their own. It was fun to have them so close, but now we get to use the deck!

And…. that’s “My Bluebird Story”! I marvel at God’s beautiful creation, don’t you?

Blueberry Cheesecake Dessert

How can you go wrong with both cheesecake and blueberries? You can’t, because this Blueberry Cheesecake Dessert is outstanding! I have combined my  Fresh Blueberry Pie recipe with a graham cracker crust, along with an added cheesecake layer. You can make this dessert in an 8×8 pan or make it as a pie. It is a rich dessert, so if you make it as a pie, cut the pieces small! 

Crust:

16 graham cracker squares, crushed – approx. 1  1/2 cups

1/4 cup. melted butter

3 T.  sugar

 

Cream Cheese Filling Layer:

12 oz. cream cheese, softened

4 eggs, beaten

1/2 cup sugar

 

Blueberry Layer:

2 pints fresh blueberries  ( use one for the blueberry sauce and one fresh pint on top of the cooked cream cheese layer)

3 tablespoons cornstarch

1 cup sugar, scant

3 T. lemon juice

 

Mix graham cracker crumbs, sugar, and melted butter together and press in either an 8×8 pan or a 9 inch pie pan. For the filling, mix the softened cream cheese, beaten eggs, and sugar together and spread on top of crust. Bake 25-30 minutes until center is set. When cool, put one pint of fresh blueberries over the cream cheese layer.

Make topping of 1 pint fresh blueberries, sugar, and cornstarch. Mix together and cook, stirring constantly,  until thick. Cool. Pour cooled blueberry mixture over the fresh blueberries on top of the cheesecake layer and chill.

Serve the Blueberry Cheesecake Dessert with a dollop of whipped cream.

Buster Bar Dessert (copycat)

Need a cool treat on a hot summer day? Then, this easy Buster Bar Dessert is just the ticket for you!

I love going to the Dairy Queen and getting a Buster Bar. They are so delicious! Want the same taste, but don’t have a Dairy Queen around? Make this dessert as it really mimics the Buster Bar tasty treat. You’ll love the sweet salty combination of fudge, caramel and peanuts, along with the crunch of the cookie crust, and the cool, creaminess of the ice cream. YUM! It’s a combination that’s hard to beat!

Buster Bar Dessert (copycat)

Crust:

16 oz.  large pkg. Hydrox or Oreo cookies, crushed

1/4 c. butter

1/2 gallon vanilla ice cream

1  1/2 c.  Spanish peanuts

Fudge Sauce:

1 cup powdered sugar

3/4 cup evaporated milk

1/3 cup chocolate chips

1/4 cup butter

1/2 tsp. vanilla

Want a quick fudge sauce? Use a jar of Mrs. Richardson’s Hot Fudge Sauce

Caramel Sauce-  I use Smucker’s Caramel. I don’t use the whole jar;  just drizzle some over the fudge.

Frozen whipped topping

Directions:

Mix  crushed cookies together with the butter and pat into a 9 x 13 pan. (save a handful for the top of the dessert)

Freeze until firm.

Spoon slightly softened ice cream over the cookie crumb base. Pack well and place in freezer. This is much easier when you open the carton all the way and slice off sections of ice cream to put over the crust.

Fudge Sauce:

Combine powdered sugar, milk, chips, butter, and boil for 8 minutes, stirring constantly. Remove from head, add vanilla and cool.

Sprinkle peanuts over ice cream and pour cooled fudge sauce over all. ( or jar of Hot Fudge sauce) Drizzle with the caramel sauce, too. Return to the freezer.

Spread whipped topping over the top and sprinkle with cookie crumbs. Cover with aluminum foil and freeze.

Peonies in Bloom Part 2

This is the second part of “Peonies in Bloom”! I could have stayed all day at the Swenson Gardens to photograph all the beautiful blooms.Who knew they came in so many varieties? The color combinations are just spectacular! The best thing about these peonies is that they don’t flop! Yes, they stay upright even when in bloom! The varieties marked “landscape” have foliage that looks great all summer long. Their website is full of helpful information about everything to know about planting them in each zone. They list colors, varieties, bloom-time, and show each flower opening up!

I learned that they don’t need a lot of water. They are not like perennials and annuals where they need to be watered often. Simply let the rains water them. They do need 8 hours of sun, however, so they don’t do well in shady areas.

One thing about growing peonies is that you become an instant flower arranger! There’s not a bad way to put a bunch together! These new varieties don’t get ants all over them so feel free to bring them in the house to enjoy!

Annie’s Pasta Salad

My cousin in California created this awesome salad and she named it after her daughter…. hence the name Annie’s Pasta Salad. It is a cross between a pasta salad and a green salad. I have made this salad so many times and always get asked for the recipe.  I know you’ll enjoy it! Thanks, Sharon, for this delicious salad!

Annie’s Pasta Salad

Ingredients:

9 oz. fresh fettuccine

1  1/2 cup cooked chicken torn in strips

1/2 c. cheddar cheese, cubed

1/2 c. pepperoni or soft salami

1 small can sliced or whole black olives

1 green, yellow or red pepper, cut in long matchsticks (I used both red and yellow pepper)

1 container cherry tomatoes, halved

2 cups endive lettuce

3 cups green leaf lettuce or use a Spring Mix combination for all

Dressing (I used Wishbone Caesar, but the recipe calls for Wishbone Olive Oil Classic Caesar…  couldn’t find it))

All the above amounts can vary to your liking!  

Directions:

If using fresh fettuccine, boil water and then add fettuccine. Remove from heat and let sit for 10 minutes.  Regular fettuccine – follow directions on package.

Drain fettuccine and rinse.

Put fettuccine in a large bowl and add chicken, cheese, salami, peppers and olives.

Pour 1/2 bottle of dressing over the ingredients above and chill in refrigerator for at least two hours.

When ready to serve, add lettuce combinations, cherry tomatoes and more dressing to taste.

When I make this for a smaller group, I mix the lettuce greens and add the amount of chilled ingredients that make the portion needed to serve. This way, the greens don’t get soggy if you have leftovers. The chicken mixture will be fine when refrigerated overnight for another salad the next day. Peonies in Bloom Part 1

These “Peonies in Bloom” are absolutely breathtaking! My sister’s friend invited us to come out to  the Swenson Gardens and tour the peonies at their peak! If you happen to be in the area of Howard Lake, Minnesota during late May or early June, you can tour these amazing fields, too! Live too far away? Tour their website!

My peonies have never been impressive. They bloom a little, but the blooms bend the branches over and touch the ground. The peonies at Swenson Gardens, stand straight and tall. The “no-staking” plant- blooms never touch the ground. They are spectacular in color and variety! On their site, they show each variety along with complete information about that plant. Swenson Gardens are the largest organic, chemical-free growers in the United States.

Here are a few of the things I learned….

  • They need a minimum of 8 hours of sun
  • Don’t water peonies. Let the rain do it!
  • Buy only a bare root plant. Don’t buy potted!
  • Don’t cut the blooms for 3 years. At 3 years, cut only 1/3 of the blooms. At 4-5 years, cut only 2/3’s.
  • Don’t plant one where a peony was before.

Taco Pie

Here’s a different way to serve tacos for lunch or dinner. Taco Pie has the great taste of a taco, but is served as a pie. Just like a taco, compliment it with sour cream and salsa. Add a side of fruit and tortilla chips for a complete meal. You’ll love the easy crust using crescent rolls. This recipe is quick enough for a family meal and fancy enough for company. The recipe serves 8, but if you only need 4 servings, freeze one pie for later.

Ingredients:

1 lb ground turkey or hamburger

1 pkg. taco seasoning

1 can (8oz) refrig. crescent rolls

6 oz. shredded cheddar cheese

2 cans (8oz) tomato sauce

 

Directions:

Brown turkey or hamburger. Stir in tomato sauce and taco seasonings. Simmer 5 min.

Unroll crescent roll dough and press onto bottom and sides of ungreased 12 inch pizza pan ( or two          8 inch pie tins) Prick bottom and sides of pan with a fork. (I find that making it in two pie tins is easier to serve.)

Bake crust at 375 degrees for 10-12 min. until golden brown. Remove from oven. Cover crust with meat mixture.

If you only want four servings, freeze the crust with the meat for another meal later.

Top with cheese and return to oven until cheese begins to melt.

Remove from oven and top with 1 cup shredded lettuce and 1 1/2 cup chopped tomatoes.

Serve Taco Pie with sour cream and salsa.  Optional items include black olives, jalapenos, avocado, and beans.

Rhubarb Muffins

Rhubarb is in season and today I’m sharing a recipe from our church cookbook. I like this recipe because it is quick and easy. It, also, makes about 30 muffins at once! Oh, and besides that, the muffins are delicious! The topping includes sugar, cinnamon, nuts, and butter. It gives the muffins an added touch of sweetness and crunch.

Rhubarb Muffins

Ingredients:

1 egg, beaten

1  1/2 cup brown sugar

1 cup buttermilk

1 tsp. soda

2/3 cup oil

1 tsp. vanilla

2 1/2 cups flour

1 tsp. salt

1 1/2 cup rhubarb, finely chopped

1/2 cup chopped walnuts (optional) or pecans

Topping:

Mix together…

1/2 cup sugar

1 tsp. cinnamon

1/2 cup walnuts or pecans

2 tsp. butter, melted

Directions:

Beat egg and add other ingredients in order listed, stirring in rhubarb and nuts (optional) by hand. Line muffin tins with papers and fill cups 2/3 full. Put 1 teaspoon of topping on each muffin before baking.

Bake at 350 degrees for 20-25 minutes. Makes 30 muffins.

Recycled Aluminum Pan Art

Recycled Aluminum Pan Art is a “reuse” art project for elementary age children. Save those disposable aluminum pans of any size and reuse them to make a creative design to hang in a window, on a door, or in a garden.  You need to use permanent colored markers on this project, so be careful about getting color on clothes. While we made some fun patriotic decorations and flowers, this project is easily adaptable to any season.

First cut the sides so you can flatten the pan. Make straight cuts, v-cuts, diagonal, or however you might like it. Use a kitchen scissors to make the cuts. Be sure to use caution as the cut edges are somewhat sharp. Flatten the pan out.

If you’re making a flower, round the outside edges or cut into a v-shape to form petals.

Make more indented details by using a dull pencil and marking them on the pan. Placing the pan on a dish-towel and gently pressing the pencil, helps make the indentations show up. Now, use permanent markers to color it. If you get permanent marker on the aluminum pan in the wrong place, use nail polish remover on a cotton ball or Q-tip to wipe it off.
